Herbs are typically at their best during the summer. Making herb ice cubes is a great way to use up any excess herbs and to ensure you have great tasting herbs all winter. It’s incredibly easy and quick. All you need is ice cube trays, water and chopped herbs! They are great for putting into sauces, stews, risottos and any hot dishes which require fresh herbs. By freezing them the day they are picked you are saving all the taste and nutrients and they will last for several months.

- Always choose the freshest and healthiest looking shoots and wash well before chopping.
- If you want to freeze whole leaves place them in the freezer on a baking tray and then put into bags once they have frozen individually
- You can replace fresh herbs in recipes with the same amount of frozen herbs
